Spinach and mushroom quiche, made while the Comcast guy was hooking up the internet, Luke was smoking cigarettes, and I was drinking a stein of Diet Dr. Pepper.
Coat a pie dish with cooking spay. Slice the potatoes very thin (about 1.5 or 2 russet potatoes). Layer the slices on the bottom and on the side of the pan, overlapping the slices. Spray with cooking spray. Then bake in a 375 oven for 7-10 minutes. Then I remove it from the oven and set it aside while I saute the vegetables and so on. And then the rest is the usual. Still bake the same amount of time, 30-40 minutes.
Mmmm that looks SO dang good. Recipe?

3 eggs
3 T flour
1/2 - 3/4 C grated cheese
1/2 C milk
salt and pepper to taste
saute 1 1/2 cups vegetables, pour 'em in to a pie crust, and then pour egg mixture on top
Bake @ 375 for about 35 minutes.
Next time we're trying it with green chiles, bell peppers, and pepper jack cheese.
Have you ever made a quiche with a potato crust (layered potato slices)? That is good.
