A week of dinners: Day 1


Spinach and mushroom quiche, made while the Comcast guy was hooking up the internet, Luke was smoking cigarettes, and I was drinking a stein of Diet Dr. Pepper.

  2. Oh, quiches are so easy!

    mix together:
    3 eggs
    3 T flour
    1/2 - 3/4 C grated cheese
    1/2 C milk
    salt and pepper to taste

    saute 1 1/2 cups vegetables, pour 'em in to a pie crust, and then pour egg mixture on top

    Bake @ 375 for about 35 minutes.


    Next time we're trying it with green chiles, bell peppers, and pepper jack cheese.

  3. Have you ever made a quiche with a potato crust (layered potato slices)? That is good.

  4. That sounds good! Do you cook the potato slices at all, or do they get soft enough in the time it takes to bake the eggs?

  5. Coat a pie dish with cooking spay. Slice the potatoes very thin (about 1.5 or 2 russet potatoes). Layer the slices on the bottom and on the side of the pan, overlapping the slices. Spray with cooking spray. Then bake in a 375 oven for 7-10 minutes. Then I remove it from the oven and set it aside while I saute the vegetables and so on. And then the rest is the usual. Still bake the same amount of time, 30-40 minutes.
